Code, Agriculture § 10–1904","heading":"","body":"(a) A product meets the Maryland standard of identity for honey if the product:\n(1) Does not contain any substance other than honey, including any food additive as defined in § 21–101 of the Health – General Article;\n(2) Has not been subjected to chemical or biochemical treatments used to influence honey crystallization;\n(3) Has not had any water added to the product in the course of extraction or packing for sale or resale as honey;\n(4) Has not begun to ferment or effervesce;\n(5) Does not have a moisture content greater than:\n(i) 23% for heather honey (Calluna); or\n(ii) 18.6% for all other honey;\n(6) Does not have a water–insoluble–solids content greater than:\n(i) 0.5 gram per 100 grams for pressed honey; or\n(ii) 0.1 gram per 100 grams for all other honey;\n(7) Does not have a fructose content greater than 50 grams per 100 grams;\n(8) Has a total amount of fructose and glucose equal to at least:\n(i) 45 grams per 100 grams for honeydew honey and blends of honeydew honey with blossom honey; or\n(ii) 60 grams per 100 grams for all other honey; and\n(9) Except as provided in subsection (b) of this section, has a sucrose content no greater than 5 grams per 100 grams.\n(b) (1) The sucrose content of the following types of honey may be greater than 5 grams per 100 grams but not greater than 10 grams per 100 grams to meet the Maryland standard of identity for honey:\n(i) Alfalfa (Medicago sativa);\n(ii) Citrus spp.;\n(iii) False Acacia (Robinia pseudoacacia);\n(iv) French Honeysuckle (Hedysarum);\n(v) Menzes Banksia (Banksia menziesii);\n(vi) Red Gum (Eucalyptus camaldulensisi);\n(vii) Leatherwood (Eucryphia lucida); and\n(viii) Eucryphia milligami.\n(2) The sucrose content of the following types of honey may be greater than 5 grams per 100 grams but not greater than 15 grams per 100 grams to meet the Maryland standard of identity for honey:\n(i) Lavender (Lavandula spp.); and\n(ii) Borage (Borago officinalis).","path":["Article - Agriculture"],"source_url":"https://mgaleg.maryland.gov/mgawebsite/Laws/StatuteText?article=gag\u0026section=10-1904","current_through":"2026-01-01","vintage":"","retrieved_at":"2026-09-14T19:55:53Z","sha256":"1149c425d86e2538201d54810d95cad26c17dd61ad8589f232ad6120174db9cd","source_id":"us-md","stale":false,"prev":"us-md/md.-code-agriculture-10-1903","next":"us-md/md.-code-agriculture-10-1905"},"notice":"GroundRules: Original legal text.
