Stat. tit. 63, § 63-1-1130","heading":"Temperatures required","body":"The refrigeration system for a locker plant or branch locker\n\nplant shall be equipped with accurate and reliable controls for the\n\nautomatic maintenance of uniform temperatures as required in the\n\nvarious refrigerated rooms and shall be of adequate capacity to\n\nprovide, under extreme conditions of outside temperatures and under\n\npeak load conditions in the normal operations of the plant, the\n\nfollowing temperatures in the several rooms, respectively:\n\nChill room\n\n(a) Temperature of thirty-four degrees degrees above zero\n\nFahrenheit (340F.) plus or minus two degrees (2 degrees) with a\n\ntolerance of five degrees Fahrenheit (50F.) for a reasonable time\n\nafter fresh food is put in for chilling.\n\nSharp freeze room. Sharp freezing compartments\n\n(b) Temperature of ten degrees below zero Fahrenheit (-100F.) or\n\nlower or temperature of zero degrees Fahrenheit or lower when forced\n\nair circulation is employed with a tolerance of five degrees\n\nFahrenheit (50F.) for either type of installation for a reasonable\n\ntime after fresh food is put in for freezing.\n\nLocker room\n\n(c) Temperature of not to exceed zero degrees Fahrenheit (00F.)\n\nwith a tolerance of three degrees Fahrenheit (30F.) higher.\n\nThe foregoing temperatures shall not be construed as prohibiting\n\nsuch variations therefrom as may occur during short periods of time\n\nincidental to defrosting. For experimental purposes, the State\n\nCommissioner of Health, upon application in writing, may authorize\n\nfor a limited and prescribed period the installation and use of\n\nrefrigeration systems or methods which in the opinion of the\n\nCommissioner will result in improvement over present methods.\n\nAn accurate direct reading thermometer shall be provided in the\n\nchill room and in the sharp freeze room or compartment. An accurate\n\nself-registering or self-recording thermometer of a type approved by\n\nthe Commissioner shall be provided in the locker room. The discs or\n\nother temperature records of such thermometer shall be kept at the\n\nplant and shall be preserved for at least one (1) year from the date\n\nof the recording.
